Carrot kheer
Carrot Kheer is a nutritious drink as it contains carrots, which are a rich source of vitamin A, and is good for eyes.
We are quite familiar with carrot halwa, a.k.a. Gajar Ka Halwa, but this dish is even tastier.
During summer it can be prepared in large quantities and refrigerated. Enjoy whenever you feel like instead of aerated drinks.
Cooking time: 20-25 min
Serves: 3-4
Ingredients
- 750 gms carrots
- 1 ½ liter milk
- 2 tbsp fresh cream
- 2 cups sugar
- A pinch of saffron
- Few cashew nuts, almonds and raisins
- A pinch of cardamom powder
- 2 tbsp ghee
Method
Wash carrots, peel them and cut each carrot into 3 pieces. Boil them with very little water in a pressure cooker till they are done. Soak saffron in 1 tsp of warm milk and keep aside.
Meanwhile boil milk in another vessel. Grind the boiled carrots to a paste.
Fry this paste for 3-4 minutes with 1 tbsp ghee so that it does not smell raw. Add this paste to the milk and stir well. Then mix fresh cream to it. Boil for sometime.
Then add sugar and boil for about 10 minutes or till the milk thickens.
Add some more sugar if necessary. Before removing from fire add saffron and cardamom powder. Coarsely grind almonds and cashew nuts. Fry them in ghee and add to the kheer. Then fry raisins in the same ghee and add to the kheer. Serve chilled.
